Creamy Shrimp Scampi with Mushrooms and Herbs. :).
[and milk]
You'll need:
An 8 ounce package of linguine [We used a 16 oz, but were a little short on our "sauce to noodle ratio"]
1/2 cup and two tablespoons of butter
1/2 pound of fresh sliced mushrooms
2 minced garlic cloves
3 ounces of cream cheese [you can throw a little extra in if you want, we did ;)]
2 tablespoons chopped fresh parsley
2 chopped basil leaves
2/3 a cup of milk
1 pound cooked shrimp
1. Bring a large pot of salted water to a boil and throw in the linguine, cooking it for about 7 minutes [or until done]
2. While your pasta is cooking add 2 tablespoons of butter to a large skillet, and cook the mushrooms on medium high until they are tender, then spoon them out into a separate bowl.
[I may or may not have been eating these throughout the rest of the cooking process.]
3. Put the other half cup of butter in your skillet, then add your garlic, cream cheese, basil, and parsley, making sure to break up the cream cheese while it melts to create a smooth sauce. Once somewhat smooth let the sauce simmer for 5 minutes, then add your milk.
[I seriously got butter EVERYWHERE during this step. It was a bit of a mess.]
4. Mix in the shrimp and mushrooms, and cook till sauce is heated throughout.
5. Toss with the linguine and eat it up!
[This is in all seriousness, the best thing I've ate in months. It's even more delicious than the sushi I had last week, and nothing is better than sushi]
